Instructions:
- Cook the spaghetti according to package directions.
- While the pasta cooks, heat olive oil in a large pan over medium heat. Add the garlic and sauté until fragrant, about 2 minutes.
- Stir in the red pepper flakes and cook for another 30 seconds.
- Once the pasta is done, reserve 1/2 cup of pasta water before draining.
- Add the cooked pasta to the garlic oil sauce and toss to coat, adding pasta water as needed to create a silky sauce.
- Season with salt and pepper, then garnish with fresh parsley and Parmesan cheese if desired.
3. Sheet Pan Fajitas
Sheet pan fajitas are an easy way to enjoy Tex-Mex flavors without much effort. Simply toss chicken, peppers, and onions in fajita seasoning, bake it on a sheet pan, and serve with tortillas, guacamole, and salsa.
Ingredients:
- 2 chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1 tablespoon olive oil
- 1 packet fajita seasoning (or homemade mix)
- Salt and pepper to taste
- Flour or corn tortillas, for serving
- Optional toppings: sour cream, guacamole, salsa, cilantro
