Slow Cooker Amish Pot Roast
Sear the roast:
Season the chuck roast generously with salt and pepper .
Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned (about 4-5 minutes per side). This helps lock in the flavors. Transfer the roast to the slow cooker.
Prepare the sauce:
In the same skillet, add the chopped onion and garlic . Sauté for 2-3 minutes until softened and fragrant.
Stir in the beef broth , apple cider vinegar , brown sugar , Worcestershire sauce, Dijon mustard (if using), paprika , dried thyme , and allspice (optional). Bring to a simmer, scraping up any browned bits from the bottom of the pan, then pour the mixture over the roast in the slow cooker.
Add vegetables:
Arrange the carrots and potatoes around the roast in the slow cooker.
Add the bay leaves on top.
Slow cook:
Cover the slow cooker and cook on low for 8-9 hours or high for 4-5 hours, until the roast is tender and falling apart, and the vegetables are cooked through.
Serve:
Remove the bay leaves and discard them. Shred or slice the roast and serve with the carrots, potatoes, and the flavorful sauce from the slow cooker.
Garnish with fresh parsley for a pop of color.
