Instructions:
- In a mixing bowl, combine the all-purpose flour, Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to create the Cajun seasoning mixture.
- In a separate bowl, beat the eggs.
- Heat vegetable oil in a deep fryer or a large, deep skillet to 350-375°F (175-190°C).
- Take each shrimp and dip it into the beaten eggs, allowing any excess to drip off.
- Next, coat the shrimp in the Cajun seasoning mixture, pressing the mixture onto the shrimp to ensure it sticks well.
- Carefully place the coated shrimp into the hot oil, one at a time, making sure not to overcrowd the pan. Fry the shrimp in batches if necessary.
- Fry the shrimp for 2-3 minutes or until they turn golden brown and crispy. Be careful not to overcook them, as shrimp can become tough if fried for too long.
- Use a slotted spoon or tongs to remove the fried shrimp from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Serve the Cajun fried shrimp hot, with your choice of dipping sauce, such as cocktail sauce or a remoulade sauce.
