Ingredients:

For the Pie Crust:

  • 1 pre-made pie crust (or homemade, if you prefer)
  • OR
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 2-3 tablespoons ice water

For the Buttermilk Filling:

  • 1 1/2 cups buttermilk
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional, for a warm, spiced flavor)

Directions:

1. Prepare the Pie Crust:

If you’re using a pre-made pie crust, skip to the next step. If you’re making your own:

  • In a large bowl, whisk together the flour and salt.
  • Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles coarse crumbs.
  • Slowly add the ice water, one tablespoon at a time, mixing until the dough just comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the dough on a lightly floured surface to fit a 9-inch pie dish. Gently press the dough into the pie dish and trim any excess. Prick the bottom of the crust a few times with a fork to prevent bubbling.
  • If you prefer a more rustic look, you can also leave the edges of the crust slightly crimped.

2. Prepare the Buttermilk Filling:

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the buttermilk, granulated sugar, eggs, melted butter, flour, vanilla extract, salt, and nutmeg (if using). Continue whisking until the mixture is smooth and all ingredients are fully incorporated.
  • The flour in the filling helps thicken the custard as it bakes, giving it that characteristic smooth, velvety texture.
