Roast

Ingredients:

  • 3-4 lb beef roast (or your preferred roast meat)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Herbs (thyme, rosemary, bay leaves)

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. Season the roast generously with salt and pepper.
  3. Heat olive oil in a large oven-proof pot over medium-high heat. Add the roast and sear on all sides until browned. Remove the roast and set aside.
  4. Reduce heat to medium. Add onions and garlic, cooking until softened.
  5. Deglaze the pot with a bit of beef broth, scraping up the browned bits.
  6. Return the roast to the pot. Add Worcestershire sauce, the rest of the beef broth, and herbs.
  7. Cover and place in the oven. Cook for about 3-4 hours, or until the meat is tender.
