Preparing the Cake

  5. Finish the Layers: Continue layering the remaining phyllo dough sheets, brushing each with melted butter.
  6. Crinkle the Cake: Using your hands, gently crinkle the phyllo dough layers, starting from one end of the pan and working towards the other. This will create a crinkly texture.
  7. Bake the Cake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and crispy.

Making the Syrup

  1. Prepare the Syrup: While the cake is baking, combine the granulated sugar, water, and lemon juice in a small saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce the heat and simmer for 10 minutes. Remove from heat and stir in the rose water or orange blossom water, if using.

Assembling the Cake

  1. Add the Syrup: Once the cake is done baking, remove it from the oven and immediately pour the hot syrup evenly over the top. Allow the cake to cool completely in the pan before cutting into squares or diamonds.
