Steak Fajita Crunchwraps

Ingredients:

  • 1 lb flank steak, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • Olive oil for cooking

Directions:

  1. In a large skillet, heat olive oil over medium-high heat. Add sliced steak and cook until browned, about 3-4 minutes per side. Remove steak from skillet and set aside.
  2. In the same skillet, add a bit more olive oil if needed. Add sliced bell peppers, onion, and minced garlic. Cook until vegetables are tender-crisp, about 5-6 minutes.
  3. Return the cooked steak to the skillet. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the steak and vegetables. Stir to combine and cook for an additional 2-3 minutes.
  4. To assemble the crunchwraps, place a flour tortilla on a clean surface. Spoon a portion of the steak and vegetable mixture onto the center of the tortilla. Top with shredded cheese, lettuce, diced tomatoes, sour cream, and cilantro.
  5. Fold the edges of the tortilla towards the center, creating a square shape. Place the crunchwrap seam-side down in a heated skillet or panini press. Cook until golden brown and crispy on both sides, about 2-3 minutes per side.
