Shepherds pie

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Recipe Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground lamb or beef until browned. Drain any excess fat.
  3. Add diced onion, carrots, and minced garlic to the skillet. Cook until vegetables are softened, about 5 minutes.
  4. Stir in frozen peas, tomato paste, beef or vegetable broth, and Worcestershire sauce. Season with salt and pepper to taste.
  5. Simmer the mixture for 10-15 minutes, allowing the flavors to meld together.
  6. Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly over the top.
  7. If desired, sprinkle shredded cheddar cheese on top of the mashed potatoes.
  8. Bake for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
  9. Garnish with fresh parsley before serving.

How to Store Leftovers

If you’re lucky enough to have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Simply reheat in the microwave or oven until warmed through.
