Chicken Madeira

Recipe Directions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Dredge the chicken breasts in the flour, shaking off any excess.
  3. In a large skillet, melt 2 tablespoons of butter and olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, melt the remaining 2 tablespoons of butter.
  6. Add the sliced mushrooms and minced garlic to the skillet and cook until the mushrooms are golden brown and tender, about 5 minutes.
  7. Pour in the Madeira wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. Bring the sauce to a simmer and cook for 5 minutes, or until slightly reduced.
  9. Stir in the heavy cream and continue to simmer for another 5 minutes, or until the sauce has thickened slightly.
  10. Return the chicken breasts to the skillet, spooning the sauce over the top.
  11. Sprinkle the shredded mozzarella cheese over the chicken breasts.
  12. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
  13. Garnish the Chicken Madeira with chopped fresh parsley before serving.
