Steak and Eggs with Hash Browns

Ingredients

  • 1 pound of steak (such as ribeye or sirloin)
  • 4 large eggs
  • 4 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Directions

  1. Prepare the Hash Browns: In a large bowl, combine the grated potatoes, chopped onion, garlic, salt, and pepper. Heat a large skillet over medium heat and add enough olive oil to coat the bottom. Add the potato mixture to the skillet, spreading it out evenly. Cook for about 5-7 minutes per side, or until the hash browns are crispy and golden brown. Remove from the skillet and set aside.
  2. Cook the Steak: Season the steak with salt and pepper. Heat a separate skillet over medium-high heat and add a drizzle of olive oil. Add the steak to the skillet and cook for about 3-4 minutes per side, or until it reaches your desired level of doneness. Remove from the skillet and let it rest for a few minutes before slicing.
  3. Cook the Eggs: In the same skillet used for the steak, crack the eggs and cook them to your liking (fried, scrambled, etc.).
  4. Assemble the Dish: To serve, place a portion of hash browns on a plate, top with slices of steak, and add the cooked eggs on the side. Garnish with fresh parsley and enjoy!
