Grilled Shrimp and Grits

Recipe Directions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, toss shrimp with olive oil, salt, and pepper.
  3. Grill shrimp for 2-3 minutes per side, or until opaque and cooked through. Remove from grill and set aside.
  4. In a medium saucepan, bring chicken broth to a boil. Slowly whisk in grits, reduce heat to low, and simmer for 20-25 minutes, stirring occasionally, until thickened.
  5. Stir in cheddar cheese until melted and smooth.
  6. In a large skillet, cook bacon over medium heat until crispy. Remove bacon from skillet and drain on paper towels, reserving 1 tablespoon of bacon fat in the skillet.
  7. Add garlic to skillet and cook for 1 minute, or until fragrant. Add green onions and cook for an additional 1 minute.
  8. Add cooked grits to skillet and stir to combine.
  9. Serve grilled shrimp over grits, garnished with crispy bacon, parsley, and lemon wedges.

How to Store Leftovers
