Southern Fried Shrimp

Instructions:

  1. Prep the Shrimp:
    • Make sure the shrimp are peeled and deveined, with tails left on. Pat them dry with paper towels to ensure the coating sticks well.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, cornmeal, baking powder, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. This mixture will be your dredging mixture.
  3. Prepare Wet Mix:
    • In another bowl, beat the eggs and then mix in the buttermilk. This will be used to dip the shrimp before coating them with the dry mix.
  4. Dredge the Shrimp:
    • Dip each shrimp first into the buttermilk mixture, then into the flour mixture, making sure it’s well-coated. For extra crunch, you can dip and coat the shrimp a second time.
  5. Fry the Shrimp:
    • Heat about 2 inches of vegetable oil in a deep fryer or a large, deep skillet to 350°F (175°C). Fry the shrimp in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes or until they are golden brown and crispy. The shrimp cook quickly, so keep an eye on them to prevent overcooking.
  6. Drain:
    • Use a slotted spoon to transfer the fried shrimp onto a plate lined with paper towels to drain any excess oil.
  7. Serving:
