Hawaiian Bliss Roasted Chicken

Instructions:

Preparing the Chicken:

  1. Preheat your oven to 375°F (190°C). Line a roasting pan with aluminum foil for easy cleanup, and place a rack inside the pan.
  2. Prepare the chicken: Remove any giblets from the chicken and pat it dry with paper towels. In a small bowl, mix together the Hawaiian sea salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning mix all over the chicken, inside and out.
  3. Roast the chicken: Place the chicken breast-side up on the rack in the prepared roasting pan. Roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer inserted into the thickest part of the thigh, not touching bone.

Making the Hawaiian Bliss Glaze:

  1. Combine the glaze ingredients in a small saucepan over medium heat: pineapple juice, soy sauce, brown sugar, ketchup, honey, minced garlic, minced ginger, sesame oil, and red pepper flakes. Stir well to combine.
  2. Simmer the glaze: Bring the mixture to a simmer and let it cook, stirring occasionally, until it thickens slightly, about 10-15 minutes. Remove from heat and set aside.

Finishing Touches:

  1. Glaze the chicken: In the last 20 minutes of roasting, brush the chicken generously with the Hawaiian Bliss Glaze. Continue to roast, glazing every 5-10 minutes, until the chicken is beautifully caramelized and cooked through.
  2. Grill the pineapple: While the chicken is roasting, brush pineapple rings with a little olive oil and grill them on a hot grill or grill pan for 2-3 minutes per side, just until they have nice grill marks.
  3. Serve: Let the chicken rest for 10 minutes after taking it out of the oven. Serve the roasted chicken with grilled pineapple rings and garnish with fresh cilantro or parsley if desired.
