Baked Mint Chocolate Chip Doughnuts

For the Chocolate Glaze:

  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
  • 2-4 tablespoons milk (adjust for desired consistency)
  • 1/2 teaspoon vanilla extract

For Garnish:

  • Additional mini chocolate chips
  • Crushed mint candies or sprinkles (optional)

Instructions:

Preparing the Doughnuts:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a doughnut pan with non-stick spray or butter to ensure easy removal after baking.
  2. Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, vegetable oil, vanilla extract, and mint extract. If you’re using green food coloring to achieve a minty color, add it to the wet ingredients now, adjusting the amount to get your desired color.
  4. Combine: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. Fold in the mini chocolate chips.
  5. Fill the Pan: Spoon the batter into the doughnut pan, filling each one about 3/4 full. Alternatively, you can use a piping bag or a zip-top bag with a corner cut off to pipe the batter into the pan for neater doughnuts.
  6. Bake: Bake in the preheated oven for 10-12 minutes or until a toothpick inserted into a doughnut comes out clean. Allow the doughnuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
