THE BEST MIXED GRILL

Instructions:

1. Prepare the Marinade:

  • In a large bowl, whisk together olive oil, balsamic vinegar, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper.
  • Divide the marinade between two bowls. Use one for the meats and the other for the vegetables to avoid cross-contamination.

2. Marinate:

  • Add the chicken, lamb, beef skewers, and pork sausages to one bowl of marinade. Toss to coat well. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • In the second bowl, add the bell peppers, zucchinis, red onion, cherry tomatoes, and mushroom caps. Toss to coat. Marinate for at least 30 minutes.

3. Preheat the Grill:

  • Preheat your grill to a medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

4. Grill the Meats and Vegetables:

  • Remove the meats and vegetables from the marinade, shaking off any excess.
  • Grill the chicken thighs and lamb chops for about 6-8 minutes per side, or until fully cooked and charred on the outside.
  • Grill the beef skewers and pork sausages, turning occasionally, until evenly browned and cooked through, about 10-12 minutes for the beef and 15-20 minutes for the sausages.
  • If including seafood, grill the shrimp and fish fillets for 2-3 minutes per side, or until opaque and cooked through.
  • Grill the vegetables, turning occasionally, until they are tender and charred, about 5-10 minutes depending on the vegetable.

5. Serve:

  • Arrange the grilled meats, seafood (if using), and vegetables on a large platter. Garnish with lemon wedges and sprinkle with fresh parsley.
  • Serve immediately with tzatziki sauce or your choice of dipping sauces on the side.

Tips:

  • Timing is Key: Start grilling the items that take the longest to cook first, such as pork sausages and chicken thighs. Add quicker-cooking items like vegetables and seafood towards the end.
  • Rest the Meat: Allow the meats to rest for a few minutes after grilling before serving. This helps the juices redistribute, ensuring your meat is moist and flavorful.
