Gotta love

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound them to an even thickness, about 1/2 inch thick. Season both sides of the chicken breasts with salt and pepper.
  3. Set up a breading station with three shallow dishes. In the first dish, place the all-purpose flour. In the second dish, beat the eggs. In the third dish, combine the breadcrumbs and grated Parmesan cheese.
  4. Dredge each chicken breast in the flour, shaking off any excess. Then dip them into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken breasts in the breadcrumb mixture, pressing gently to adhere.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side. You may need to cook them in batches to avoid overcrowding the skillet.
  6. Once all the chicken breasts are browned, remove them from the skillet and set them aside. Pour marinara sauce into the skillet and spread it out evenly.
  7. Place the browned chicken breasts on top of the marinara sauce in the skillet. Spoon additional marinara sauce over the top of each chicken breast.
  8. Sprinkle shredded mozzarella cheese evenly over each chicken breast.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Once cooked, remove the skillet from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
  11. Serve the chicken Parmesan hot, accompanied by your favorite pasta or a fresh green salad. Enjoy!
