Fresh Blueberry Cheesecake with Homemade Crust

Directions

Making the Crust:

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

Making the Cheesecake Filling:

  1. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Stir in vanilla extract until well combined.
  4. Gently fold in fresh blueberries.
  5. Pour the filling over the cooled crust, spreading it evenly.

Baking the Cheesecake:

  1. Place the springform pan on a baking sheet to catch any drips.
  2. Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  3. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  4. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight before serving.
