SHRIMP FRIED RICE

Ingredients:

  • 2 cups cooked rice (preferably jasmine or long-grain)
  • 1 pound shrimp, peeled and deveined
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced

Directions:

  1. Heat a tablespoon of cooking oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of cooking oil and sauté the minced garlic until fragrant.
  4. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
  5. Add the mixed vegetables to the skillet and stir-fry until tender.
  6. Return the cooked rice to the skillet and toss with the vegetables.
  7. Add the soy sauce, oyster sauce, and sesame oil to the skillet, stirring well to combine.
  8. Return the cooked eggs and shrimp to the skillet, stirring until everything is heated through.
  9. Season with salt and pepper to taste, then garnish with sliced green onions before serving.
