Stuffed Cabbage

Ingredients:

  • 1 large head of cabbage
  • 1 pound ground beef (or substitute with ground turkey for a lighter option)
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth

Directions:

  1. Prepare the Cabbage Leaves:
    • Bring a large pot of salted water to a boil.
    • Carefully remove the core from the cabbage head and place it in the boiling water.
    • Cook for 5-7 minutes, or until the outer leaves are tender and easily removable.
    • Remove the cabbage from the water and let it cool slightly. Peel off the leaves, trimming any thick veins if necessary.
  2. Prepare the Filling:
    • In a skillet, cook the ground beef (or turkey) over medium heat until browned.
    • Add the chopped onion and garlic, cooking until softened and fragrant.
    • Stir in the cooked rice, diced tomatoes, tomato sauce, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
  3. Assemble the Stuffed Cabbage:
    • Preheat your oven to 350°F (175°C).
    • Spoon a portion of the filling onto each cabbage leaf, then fold the sides over the filling and roll up tightly.
    • Place the stuffed cabbage rolls seam-side down in a baking dish.
    • Pour the broth over the stuffed cabbage rolls, covering them evenly.
  4. Bake:
    • Cover the baking dish with foil and bake for 45-50 minutes, or until the cabbage is tender and the filling is heated through.
  5. Serve and Enjoy:
    • Remove from the oven and let the stuffed cabbage rolls cool slightly before serving.
    • Garnish with fresh herbs if desired, and enjoy this comforting meal with your favorite sides.

How to Store Leftovers
