Shrimp & Spinach Alfredo

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Season the shrimp with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
  4. Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
  5. Stir in the chopped spinach and cook until wilted.
  6. Lower the heat to medium-low and add the heavy cream, Parmesan cheese, and butter to the skillet. Stir continuously until the cheese is melted and the sauce is smooth.
  7. Return the cooked shrimp to the skillet and let them heat through in the Alfredo sauce.
  8. Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the sauce.
  9. Season with additional salt and pepper to taste.
  10. Garnish with chopped fresh parsley and serve immediately.
