Recipe Directions

  1. In a large pot or Dutch oven, combine the chicken pieces, chopped onion, carrots, celery, garlic, chicken broth, bay leaves, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the chicken is cooked through and tender.
  3. While the chicken is cooking, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, and salt.
  4. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

  8. Once the dumplings are cooked, remove the bay leaves and discard them. Shred the chicken using two forks, then return it to the pot.
  9. Taste the broth and adjust the seasoning if necessary. Stir in chopped parsley for added freshness.
  10. Serve the chicken and dumplings hot, ladled into bowls with plenty of broth.
