Choose and Prep the Potato
Start by selecting a large potato. A potato with a smooth surface and close to cylindrical shape will be easy to work with. Wash and peel the skin of the potato .
Slice the Potato
Fill a bowl with water and place the potato slicer on top of it. Thinly slice the potato across the width, making sure the slices immediately drop into the water. This prevents the potato slices from browning.
Wash the Slices
Once the whole potato is sliced, wash the potato slices in water 2 or 3 times until the water runs clear. This removes any excess starch from the surface. Add about a tsp of salt to the bowl, mix well, and let the potato slices soak in water .
Dry and Fry
After about 10-15 minutes, remove the potato slices from the water and dry them on a clean kitchen towel or paper napkins . Meanwhile, heat the oil for frying. Once hot, reduce the heat to medium-low and fry a batch of potato slices. Continuously toss the slices in the oil until they turn slightly golden and crisp . Remove the chips from the oil and drain the excess oil. Before adding the next batch, wait for a few minutes to ensure the oil is hot again.
Season and Enjoy
Taste the potato chips and add additional salt to taste . Toss them up and enjoy a plain salted version.
Spice it Up
Add red chili powder to the chips for a spicy chili version , or freshly ground black pepper for a spicy pepper version .
Store and Savor
Store the chips in an airtight container or ziplock bag and enjoy later .
N.B:
Adjust seasoning per taste.
Use a sharp potato slicer to get thin a
nd crispy chips .
Washing the potato slices removes excess starch and provides even browning while frying.
Do not add wet slices of potato to hot oil. Dry them off completely before frying .
